Your blue cheese recipe would make good use of any left over buttermilk.

Have you ever tried blue cheese dressing on a roast beef sandwich?

You could substitute your dressing...it looks much better.

ROAST BEEF SANDWICHES WITH BLUE CHEESE DRESSING

4 ounces blue cheese, crumbled
2/3 cup sour cream
1/3 cup mayonnaise
1 1/2 teaspoons Worcestershire sauce
1 loaf crusty multi-grain or whole wheat bread, cut into sixteen 1/4-inch-thick slices
2 tablespoons (1/4 stick) butter, room temperature
1 1/2 pounds thinly sliced rare roast beef
1 7.25-ounce jar roasted red peppers, drained, sliced (optional)
3 bunches arugula, trimmed


Using fork, mash cheese in bowl. Whisk in sour cream, mayonnaise and Worcestershire. Season with salt and pepper.
Spread 8 bread slices with butter. Spread remaining 8 bread slices with cheese dressing; mound beef atop dressing, dividing equally. Sprinkle with salt and pepper. Top with peppers, if desired, then arugula and buttered bread slices. Cut sandwiches in half. (Can be made 6 hours ahead. Wrap in foil and refrigerate.)

Makes 8 sandwiches.

I made this for a family dinner and everyone really liked these sandwiches. I would recommend making the dressing a little ahead of time, so that the flavors can marry. I used red leaf lettuce instead of arugula. This is an easy recipe to make, and although they are just sandwiches, it is suprisingly elegant. It's a nice dish for a buffet-style party.

Amazingly good for a simple little sandwich recipe. The blue cheese, peppery arugala, beef, and roasted peppers are a brilliant combination.

Yum! These sandwiches are an annual event in our household. Everyone we've served them to has requested the recipe. I must confess to substituting Feta for the Blue cheese. I also use Bolo rolls from the Grand Central bakery (for all you Seattleites).
