This is an incredible soup- of course you can't get up after you have it, it is so full of calories. But on Thanksgiving who cares?
I have served this at dinner parties and it always gets rave reviews.

Zesty Pumpkin Soup

1/4 c butter 1/8 tsp ground coriander
pepper 1/8 tsp crushed red pepper
1 c. chopped onion 3 c. chicken broth
1 garlic clove, crushed 2 c. canned pumpkin
1 tsp curry powder 1 c. half and half
1/2 tsp salt
Sour cream and chives

In a large saucepan, melt butter; sauté onion and garlic til soft. Add curry, salt, coriander, and red pepper. Cook 1 minute. ADd broth; boil gently, uncovered, for 15-20 min. Stir in pumpkin and half and half; cook 5 min. Pour by batches into blender and blend til creamy. Serve warm with a dollop of sour cream and chives.

I have no idea if this is good as a leftover or prepared ahead, since we never have leftovers.
