Euterpe, my daughter has gone completely vegan, I'll ask her for recipes...I think she's cooking up a tofurkey this year. But i DO have a vegan-type recipe that my dad always fixed Thanksgiving - his "Viking salad."

Very simple - one can of kidney beans, rinsed. One diced onion, maybe four diced celery stalks. For the "sauce", apple cider vinegar diluted with water 2 to 1 and sugar, although agave sugar would be a good sub, mix that together, pour over the veggies and chill overnight...very simple, but good, really.
