The ostrich market is growing. Market research from Deloitte & Touch, December 1994 estimated that there were only 80,000 ostriches in the United States in 1993. Research indicated that in 1994 there were only about 400,000 ostriches world wide, and only 150,000 to 250,000 in the United states.
Market research from the most current survey from the American Ostrich Association, indicates the there were only 350,000 to 500,000 ostriches in the United States in May of 1995. In order to gain only 1% of the US meat market, the industry would need to harvest 80,000 ostriches per week. That amounts to 4,160,000 ostriches being harvested per year. The area of greatest growth overall in the ostrich market is meat sales.
