We're going to try Chef Alton Brown's mashed potatoes

boiled potatoes
1 cup heavy cream with five mashed cloves of garlic
1 cup fresh parmesan cheese.

Mash the potatoes with the cream/garlic - it's a semi soup consistency.

Then add the cup of parmesan cheese and it firms up. I'm not sure how many potatoes, he didn't say - probably eight.

A friend told me her sis adds a block of Philly cream cheese to the mix instead of Parmesan.
