Or serve the salad after the main course, which was its original position in dining. Salads are generally served after in Europe and in many French restaurants. I'd just as soon skip the salad and have better accompaniments to the main course or a proper first course.

A rich old balsamic is usually not too upsetting to wine and there is always lemon juice.

I agree with you about the enjoyment in planning a meal and selecting the wines. It is fun for me and I enjoy trying to find different combinations for my guests.
