You seem to be spot on with your picks. Tonight I selected a Guigal 1988 Chateaux Neuf du Pape. It had the backbone for the chili and has gotten even more interesting as the evening progressed. Etienne Guigal is more known for his Cotes Rotie, but this was before he made the winery buy of a lifetime that took him from a great winemaker to a great winemaker with great vineyards. Disclaimer. It cost nearly thirty dollars over a decade ago.
