Pinot Noir is one of the lightest and least tannic red wines. It has a silky texture that I find is good with smoked salmon and grilled salmon as well. It is actually a current classic combination.

I think the complexity of a gerwurtz would fight the salmon. I am sure you were thinking about how gewurtz goes with the cuisine of Alsace...smoked meats and such. I'm just not sure about the rose petal character with the salmon. I am a huge fan of gerwurtz but usually like it with chinese and some thai foods.

All wine pairing is subjective of course. The best money I ever spent was to take the Windows on The World wine course taught by Kevin Zraly many years ago. Kevin now does the wines for Smith and Wollensky. I was the youngest person there and it was expensive for me to go but it has given me a lifetime of pleasure. To quote you: "so many wines, so little liver".

I'm in the kitchen working on dinner. Beef fillet prepared with a little wine and shallots, roasted potatoes and brussel sprouts, cheese biscuits and poached pear with creme anglaise for dessert. I have a simple sparkling wine, Chandon's Blanc de Noir and a Rudera syrah from South Africa. A simple meal for a gray and rainy Christmas day. Happy holidays to all of you. Money Penny
