Not at all.

Ingredients:

3 large eggs, room temp
1 1/2 cup milk (I used 2%), room temp
1 1/2 cup unbleached flour
3/4 tsp salt
3 TB beef fat (from cooking the roast)

Method:

Mix flour and salt. Make a depression in the middle and add the eggs, lightly beaten.

Add milk slowly and mix with flour/salt mixture and eggs. Not more than enough to combine it all. About 30 secs.

Cover and let sit while the meat cooks. Not less than 1 hr, up to 3 hr.

After removing roast from moven, whisk 1 TB beef fat into batter, and then mix with electric mixer until bubbles form and batter is smooth. At lest 30-60 sec.

Add 1/2 tsp fat into each of a standard muffin tin.

Put tin in oven at 450 degrees for 3 mins. Fat will smoke.

Take out and fill tins to 2/3 full with batter.

Bake without opening oven for 20 mins at 450.

Reduce tempt to 350 and cook for 5-10 mins more, till golden brown.

Serve immediately.

Mmmmmmmmmmmmmm. They even reheat well, which the pudding made in a large pan does not (due to excessive grease).
