Been there too. I saw lotsa folks eating with their hands. Shell fish and barbeque, etc. My Texas job had me travelling quite a bit across that part of the land. I sure ate some great food along the way. Native things, I don't see much of here in Colorado. Creole and cajun items don't appear on our menus around here, unless we go to a specialty restaurant, which we do often.
