Doesn't that work just great? I wouldn't cook a steak any other way. Even did it with my Christmas Rib Roast for the first time this year. It was the best roast I ever cooked. Once you try it this way......tenting........you never go back. Now try some different rubs and marinades and see how juicy that steak gets. ;)
