PEPPER STEAK

serves 6

1 lb. lean steak or any good cut meat cut 1/2 in thick
1 TBS Paprika
1 1/2 cup beef broth
2 TBS cornstarch
2 TBS butter
1 Cup sliced onions
1/2 Cup each Water and Soy Sauce
2 Cloves garlic, crushed
2 Green Pepper Strips
2 Tomatoes cut into 8 pieces (Peeled if you like)

Pound the meat to 1/4 in thickness and cut into 1/4 in. strips
Sprinkle meat with paprika and allow to stand while preparing the other ingredients.

Using a large skillet, brown meat in butter.
Add garlic and broth (cover and simmer 30 mins.)
Stir in onions and Green peppers (cover and cook 5 more minutes
Blend cornstarch, water and soy sauce, until there are no lumps. Stir into meat mixture,. Cook stirring until clear and thickened about 2 min.
Add tomatoes and stir gently.

You may serve this over rice or noodles. I prefer noodles, but many like it better with rice, so that is your call.
