Right here. This is a thick chili and not soupy, just the way I like it.

1T olive oil
1 1/2 lb venison or lean ground
3/4 lb chorizo
3 cups diced onions
2cups sliced celery
4 cloves garlic minced
3 cans diced tomatoes and juice
1 8 oz can tomato sauce
1 cup or more to taste of red wine
1 T beef base
1T chili powder
1 1/2 t cayenne pepper
1 t black pepper
1 t white pepper
1 T Worcestershire sauce
1 t salt
1/2 t ground cumin
1/2 t cinnamon
3 cans kidney beans with jalapeno peppers
3 jalapeno peppers diced up

In a dutch oven, heat the oil over medium high heat and add the garlic. When garlic is browned and happy, add the meat, onions,celery and jalapenos. Cook until the meat is browned. Add everything else except the kidney beans cover and put in a 350° oven for 1 1/2 hours. Pull out and adjust chili powder and peppers and wine to taste then add the kidney beans and cook for 1 more hour.
