We used to do tons of smoked salmon out in the back yard in our home made smoker.........that looked like an outhouse btw........when hubby had three salmon processors in Alaska. He'd bring home the best of the best and really did some wonderful salmon. We preferred cold smoked over everything else. Had to get up several times in the night to do it right but is was worth the effort.
