Ever try tomato sauce.....home canned if possible.....simmered with green peppers and then drop the eggs into the sauce and just lightly break the egg....not quite soft and not quite scrambled.....the peppers must be simmered long enough to be soft and sweet.

and toast on the side.

this is good eats.
