What I don't think they realize is that, in order to delete emails in a modern system, one of two things have to happen:

1) It has to be designed to allow complete deletion.

or

2) It must be massaged by experienced IT people to completely delete emails.

Why? Because modern email systems are built for resiliency. Who wants a disk crash to completely lose their emails? No one. So, today's systems are designed for redundancy and recovery. That means multiple copies (mirrors) and multiple, probably nightly, backups.

When you delete an email, it typically will only be deleted in today's 'view'. You won't see it anymore, but it will still remain on a backup somewhere. To completely delete that email, you have to go back to the backups and eradicate that email - a tricky procedure at best.

This is exactly why experts say: don't say anything in an email that you wouldn't want the public - and your mother - to see.
