You'd have to define enough time. Enough time to study a limited problem like the average size of a flies wings would be doable if we put enough minds on the problem over sufficient time. But that would be limited to the flies existing in the current sense. We may have lost evidence forever of ancient species of flies. We don't know whether flies of the future would be enormous or microscopic and have no way to determine changes in our biosystems that could provide a definitive answer. So for this one, fairly observable trait in flies we can't nail down what would be enough time. Enough time to study something relies on the something being a constant.

Unlimited time is not the same as eternity although it suggests that time is no object. Time in this sense is an object however. The Universe, as we know it is unlimited in its ability to generate objects and diversity of objects for us to know about.

It doesn't say much about God except as a characteristic. The situation, however, says that we are limited, have always been limited, and lends to the belief that we will always be limited in this temporal (limited) existence. The all knowing reference is a reference to something that is not limited. By most people's definitions that extends beyond the temporal (limited) creatures. That seems to contradict your belief that given enough time all things are knowable by us.
