It is based on simple math. If you really want to know how, read further.

After you go through the add and subtract bit, you will always come up with a number divisible by 9 (9, 18, 27, 36, 45, 54, 63, 72, 81). Now, notice that all the numbers divisible by 9 have the same symbol while the rest of the numbers are randomly assigned a mish-mash of symbols, just to keep you from catching on.
