Perhaps some of it would come from modern machinery in the fields they work. I expect if the labor rate is extremely low these large farms or corporations do not invest in automation of labor.

I recently priced some landscaping contractors,, most were $50hr. i laughed.. talk about ripping off illegals, we are not saving a dime, its the contractor who is ripping off illegals and the consumer. They are collecting on both ends.

I told one guy he is nuts , you do not pay even close to $15hr for those workers. he said straight face to me i have to cover costs for my machinery , gas etc. He then said $50hr was the rate for anything he does, raking leaves, basic clean up etc etc. I checked with three other contractors all have the same or higher rates.

A year later replaced 26 landscape steps, landscape ties with slate on top. It took me two years to find a landscaper who would at least consider the job and not charge me out of sight prices. It is all heavy labor work, no technical experience required. rip out 6x6 ties and replace them and build back up the inside of step with cement sand and top off slates.

The cheapest rate i could get after negotiations was $35hr. and the workers were illegals i am sure. the area where the contractor is located is full of mushroom pickers etc. I watched the job progress and he was the only person who knew what to do and the others after specific instructions did the heavy work. I expect the profits went directly into his pocket and very little went to the laborers.

laborers didn't speak english, same with roofers i had last year.
