For a good substitute for grains with gluten, the South American grains don't have it! Quinoa Amaranth are great substitutes for corn meal, Spelt,and Kamut, are made into reasonably tasting breads. We found a Spelt organic tortilla at Whole foods that tasted like a regular flour tortilla. It was Great!

I have found lately that if I stay with organic breads, (including wheat sourdough) I don't go into the phlegm response. So, maybe chemicals are playing a part in this mystery.
