We were in kayaks with a support raft carrying camping gear and food. It was a once in a lifetime trip, fell asleep to the screams of howler monkeys, saw toucans and macaws, got lost in the jungle for a little while and even found a patch of quicksand (unlike the movies, you only sink in it up to your waste).

You can find queso blanco at supermarkets where there are a lot of latinos, the texture is like muenster cheese.
