Does anyone own a ceramic knife? I bought one on Ebay last year. I have never seen a knife this sharp. Last Thanksgiving one of my friends 23 year old son came and since he is a chef, he carved both turkeys. He was staring wide-eyed at the ease at which the knife cut and offered to steal it when I wasn't looking.

They stay sharp much much longer than steel knives. They recommend sharpening them at qualified shops or mailing them back to Kyocera - the only down side I can think of.

I think it would make a great birthday or Christmas gift for the chef in the family.
