I made some large mouth bass last night that was quite scrumptious. I was flying blind but I think I remember seeing a recipe like this once upon a time so it's not totally original.

2 bass filet's about 14 oz's each I expect any firm white fillet would work just as well this is just what I happened to catch:)

1/2 stick of butter melted and about 1/8 cup of squeezed lemon juice. Mix half with about 1/4 cup of bread crumbs and set aside. Brush metal steak plate with butter and set fillet on the butter. Salt and white pepper the fillet and brush with butter and put about 6" under broiler. Broil for about 5 minutes basting a couple of times and pull from oven.

Melt about 2 tablespoons of butter and add 2 T of flour and make a blonde roux and then add 1/4 cup of half and half and boil until thickened. Add 1/2 cup of lump crab meat and stir until heated through.

Add 1/2 of crab mixture atop each fillet and then 1/2 of bread crumb mixture to each and broil until crusted and fillet is heated through again, about 4 minutes.

Mmm good.
