The vegetarianism we are involved in (because my wife does the cooking and makes most of the food choices) is for health reasons too. Though, my wife has the emotional involvement of being kind to animals, not wanting to eat them because they are cute, etc. Guess on that point I'm not so sensitive.
My authority on not avoiding animals for the sake of sentimentality or because it is asserted to be morally wrong to eat them is what God told Noah, as recorded in Genesis chapter 9: "Every moving thing that liveth shall be meat for you; even a the green herb have I given you all things. But flesh with the life thereof, which is the blood thereof, shall ye not eat." If God says it is ok, then it is. That was spoken to mankind after the flood, probably (in my opinion) because the availablity of plants of the right kinds everywhere was knocked out of whack by the flood.
Sounds like hemp could be a profitable crop, but the drug use will probably keep it from becoming one.
