You would think there would not be that big a leap between using sugar cane vs corn stalks

The discovery of a practical method to create cellulosic ethanol does not depend on the source material - the point is you convert what is normally waste into fuel - not the fruit into fuel. As for why they don't grow sugar cane instead of corn - heck I don't know probably local weather, soil, time to maturity and harvesting and processing equipment all play a part.
