Handbrake (http://handbrake.m0k.org/) is what I use. It also has a preset for Apple TV so you don't have to figure out what resolution to rip at. In addition, all the different program items on the DVD (i.e. main feature, deleted scenes, outtakes, etc.) can be ripped as individual "movies" (i.e. files). After ripping, you open the movie on iTunes, which automatically adds it to your iTunes movie library. From there you just need to sync to Apple TV. Very acceptable resolution :)
I rip on my MBP 2.4GHz. You should have no problems ripping on your iMac. Of course the faster your processor and the more RAM, the shorter the ripping time. Note that it will take awhile to rip. Always do a two-pass rip for better results (takes longer, but worth it).
do you move all the content over to your Apple TV, or do you stream it
A bit of both but I prefer to move the content to Apple TV since my laptop isn't always available for streaming. Now, because I can't possibly store EVERYTHING on Apple TV owing to space limitations, I only put what are my current top movies, which on a 160GB drive is about 60-75 full-length movies (more if you're talking TV episodes). The movies that I can't fit on Apple TV, I park on an external HD -- will be needing a terabyte drive soon ;)
