My lobster tails would never turn out. So I finally broke down and asked a friend who is a chef what the problem was. I said Gary my lobster tails suck and he interrupted me and said because you way the hell over cook them. I said well gee, how do you know that and he said because everybody does including most chefs. Lesson learned.

Your also right on the smell test because it works with the broiled lobster also.
