appro... i use a cast iron grill pan much like this bbqguys.com works wonderfully for steak and seafood the only other thing i would add to your post is to use kosher salt with hot water and paper towels to 'scrub' the pan without detergent add a light coating of canola oil, put back into the oven and you are done!
