Here is what I have always done..

1.. Edit the Old stock symbol and name and change it to a new symbol and name.. When Quicken ask if you want to merge the historical transactions to new symbol and name, you click yes..

2.. If you are getting fewer or more shares in exchange for your old shares, there is a transaction type that will allow you too register that.. You have a choice I think of either showing it as a split (reverse or forward) if it is clean cut or you can show xxxx new shares for xxxx old shares.. Quicken will adjust your cost base accordingly based on the ratio..
