Fred, The USDA and FDA have resisted the use of irradiation for years on meats because of the production of free radicals, which could lead to mutagenic activities. Many studies suggest that they worry too much about this aspect, especially since the pyroles coming from the home bbqs are much more mutagenic than any free radical formed from radiation. However, public perception and the bad rap already surrounding the field of radiation and isotopes in general feeds the fires of public disapproval. THis is a tremendous opportunity for companies like OZON to step in with the technology to make things happen economically and in many cases better. However, in the past my research teams and I have done millions of dollars worth of research on radiation and processing and I can tell you that it should have been used years ago on everything from vegetable preservation to meat spoilage control.
