Delicious Potato Omelet

1 lb frozen shredded potatoes, thawed
1 ea medium onion, thinly sliced and chopped
1 ea large clove garlic, mashed
1 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
butter, canola oil
4 ea med eggs
1/2 cup buttermilk
salt and pepper

This is an incredibly good omelet we recently tried and it is good either plain or with salsa or catsup.

Take a large metal pan - at least 12 inches - and heat on medium high temperature. Add 1 tbsp oil and 1 tbsp butter. Sprinkle in the onion and garlic and grate pepper (about 1/4 tsp) over it and add some salt (about 1/2 tsp). Let it fry a couple of minutes until soft. Add the potatoes over the onions and sprinkle another tbsp oil over all. After 5 minutes or so, turn over chunks of the browned potato mixture until all is turned over. After this side browns turn over again to make sure all is browned. Note: the result should be a mix of browned and still white potato mixture. Turn all into a metal colander over the sink to drain excess oil and butter. Be sure to careful scrape all the browned parts from the bottom of the pan and add it to the colander.

Clean the pan with water and be sure it is free from all remains or the omelet will stick.

Heat again over medium heat with a tablespoon of butter. Meanwhile, break 4 eggs into a mixer, blender or food processor. Add 1/2 cup buttermilk and some salt and pepper. Blend for a couple of seconds until just mixed thoroughly. Add to pan by pouring around edge so melted butter is left in center. Egg will gradually cover entire pan.

Let cook a minute so edges are starting to harden. Sprinkle potato mix over entire egg, add mozzarella and then Parmesan the same way. Sprinkle more salt and pepper on it - about 1/4 tsp each will do.

Let cook a minute or two more so the egg starts bubbling. Carefully flip half the omelet over the other half... don't worry if it is not completely cooked.

Tip the omelet onto a large ceramic or glass plate. Place in the microwave and cook on high for 3 more minutes.

Serve - salsa and catsup are good condiments to spread on top.

Enjoy - this is a really hearty, tasty breakfast for two. And note that it may be under seasoned - you may need to add more salt and pepper to taste at the table.
