I didn't realize that Gumbo is served over rice. I guess I'd have a big container of steaming rice next to the bowls and spoons and instruct everyone how to eat it. No one up here has a clue about southern food, but I know every time I've eaten it I've loved it.

I also found this recipe for Gumbo in several places on line. I have a feeling most of the people coming would not eat it if I add Oyster, so won't. I'm going to play around with the two recipes and come up with my own variation.
