I've used both.

OS X Server does come with a host of useful applications that are all set up and ready to go. It's very easy to administer, and you can be quite sure that everything that is there will work right away, with very little effort.

Linux takes more effort, both in setup and in maintenance.

Both are reliable.

I guess if you have a lot of time and not much money, Linux makes more sense. But the server version of OS X is not very expensive, in relative terms, though you do have to run it on an Apple computer.
