The immune system always takes a few days to ramp up. The T cells and B cells specific to the bugs proliferate in lymph nodes, with a division cycle time (i.e. doubling time) of about 8 hours. You go from having only a few hundred of these cells to having millions, but it takes time. In other words, the spoons work, given time, but so does rolling up newspaper into balls and throwing them out the window.
