Everyone who ate at Thanksgiving has requested my salad recipe. It was quite good but I guess it was impressive to my guests. Since it's so easy I thought I should post it here also. Spinach, pear and shaved Parmigiano-Reggiano salad Dressing, mix before for flavors to meld. 1/2 cup extra virgin olive oil 2T Balsamic Vinegar 2t whole grain mustard 1t sugar 1t salt freshly ground pepper to taste I mix that in the morning and then shake it periodically through the day 8 cups of spinach leaves tightly packed, stemmed rinsed and dried 2 Bosc pears. Do not peal, quartered lengthwise, cored and cut into long thin slices 1/2 cup coarsely grated cheese Add dressing and toss lightly to not break up pear slices and serve.
