TASTY HEALTHY MUFFINS..

I came across these muffins on a site for healthier choices and made them for my husband and he loved them. Usually he doesn't care for muffins for they're often on the dry side. These he loved. I got to thinking that maybe you would like this recipe. To me, if you're on the run in the morning, these would be great to grab one or two on the way. I think kids would like these too. These are exceptionally moist due to the applesauce. I'm sure you could use artificial sweetener if you liked or could even reduce the amount of brown sugar if you want to be stricter with the sugar; however, if you figure 12 muffins and 4 tablespoons for all of that, it really isn't a lot of sugar.
I use the healthier oil and I've used egg beaters in place of the egg white, but both are fine. Also, I used soy milk for the milk requirement. I've added nuts and either prunes or raisins as a variation. Of course that would change the caloric count for anyone watching calories.

Applesauce Oatmeal Muffins
1 ½ cup dry oatmeal
2 ½ cup bran flakes, finely crushed (measure, then crush)
¾ teaspoon cinnamon
¾ teaspoon baking soda
2 tablespoons canola oil
1 egg white
1 teaspoon baking powder(I get this at health food store to reduce sodium for my husband.)
1 cup unsweetened applesauce
½ cup skim milk
½ cup brown sugar
Combine all ingredients until moistened. Spray muffin tins with non-fat cooking spray and fill. Bake at 400 degrees for 20-25 minutes. Yeild: 12 muffins
Per serving (1 muffin): 135 calories, 3 gm fat, 3 gm protein, 24gm carbohydrate, 0 mg cholesterol, 164mg sodium, and 3 gm dietary fiber
