<<<For example, sleep apnea patients are almost always very overweight, very heavy snorers, and their partners can actually observe them not breathing while sleeping.

The almost always IMO is not correct - as follows :

Being overweight might be a factor but weight might not be either. There are many who are diagnosed who are just a few or a dozen or twenty lbs overweight, or even exactly where the doc says they should be at their age, height, etc. There are thin people with this problem.

Snoring may or may not be a sign, and many who are mild snorers might still have severe sleep apnea.

Not all people that are potential cases have partners. Or at least partners that will stay in the room with them and watch them have a rough night of sleeping, especially if they are snoring...
