Why would they? Extra weight, Extra aero-drag on the plane, Extra maintenance.

These planes currently use VHF/HF radio to accomplish these tasks. It's in the polar regions where the planes more or less have to relay on ionospheric "skiping" to maintain communications. Iridium simply provides a more robust avenue of communications. For cost purposes. These airlines will probably continue to use VHF in non-polar regions. With Iridium as a back-up. But, it won't be long until they figure out that they can use that system for Ground to Air Passenger Communications.. At least that is my opinion.
