I don't think Li-ion will match NiMH in price within 5 years. I do believe it is possible for Li-ion to completely displace NiMH in certain market segments such as notebook computers >$2500, cell phones > $200, etc. For instance, when the notebook costs $2500 - $6000, the difference between $25 and $60 OEM cost (x3 at retail) is something that consumers will pay. Products trying only to be low-price, such as the notebook equivalent of the <$1000 desktop, will not switch.

One of the big drivers of a switchover is that most consumers don't actually have any idea how much more runtime Li-ion delivers over NiMH. In reality it is +20% at best and NiMH vendors a closing the gap. But they have been sold that Li-ion is the "best" so they all want it, because anything that alleviates the problem of poor battery life in their notebook, even just a little, they'll buy.

My background is that I design battery chargers for portable computers. I am in relatively close contact with most major battery vendors. I actually know a lot more than I'm allowed to say here because I don't want to violate any non-disclosure agreements, but I'll try to keep you all as informed as I can.
