I have learned to try to stay away from batters with fried chicken as they end up making too thick a coat on the chicken. I guess you could use rice flour or some other than wheat flour and it might not be as thick.

The best fried chicken I have made is using flour seasoned with salt and pepper for the first coat, an egg wash for the second and then fine seasoned breadcrumbs for the final coat. Also, by not keeping the oil too hot - say down below 350 F - you will reduce the risk of burning the coating - especially if you are using batter.
