Homemade stocks are the single most important ingredient in really good cooking, IMO.<NG> It's what distinguishes man from the animals......<G>

One good stock tip (I usually make a big batch once a month and freeze 'em). Pour stock into an ice cube tray and freeze it. When frozen, empty cubes into a ziplock storage bag. That way if you need a couple tablespoons, you don't have to thaw a bigger portion.
