Have you read the 60's classic "Diet for a small planet?"
It elucidates how people - especially Americans - eat quite high on the food chain.

We as humans have a knack for finding the most concentrated form of energy in every aspect of life. Meat is to grain as Oil is to coal, as Sugar Cookies are to fruit, as CDO's are to treasury paper.

There's a good side to progress, but it is easily abused.
