This is a recipe I've made a lot. Especially in this economy, I think people will like it for it isn't expensive to make.

BAKED SALMON LOAF

2 c. or 1 large can salmon..don't drain.
(I use an inexpensive brand for this, not the more expensive kind of canned salmon I use for a salad.)

2/3 c. evaporated milk ( I use skim, powdered, or whatever.)

1 c. cornflake crumbs

1 egg, well beaten (I use Eggbeaters.)

1 Tbsp. minced parsley

2 Tbsp. minced onion

1/2 tsp. salt ( I don't add this.)

1/4 tsp. poultry seasoning (or thyme)

Mix all together. Put into greased loaf pan. Bake at 375 for 40 minutes. (Last night I used a tin I have that is for the huge muffins (6) and put the mixture in that and baked it around 20 minutes or so. I liked it for it came out in nice round shapes and each one could be a small serving.)
