Todays project was apple pie.

2 nine inch crusts
2 1/2 cups flour
1/2 t salt
1 cup cold lard cut in chunks
2 1/2 T sugar
ice water

Combine all ingredients except water in a food processor and process until incorporated and looks like course meal. Add just enough ice water to get the dough to come together then divide in 2 and press into a disc 1/2" thick and wrap and refrigerate for 1 hour.

5/6 apples of medium size
3 T flour
3/4 cup sugar
3/4 t cinnamon
1/2 t nutmeg
pinch of salt

peel and core apples and slice 1/4 thick or so slices. Toss with some lemon juice to keep from browning. Add flour, sugar and spices and toss to coat.

Remove disc 1 from fridge and on a lightly floured surface roll out to 12" round and fold over and lift and place in coated pie pan. Trim edges for about 1/2" over hang. Add apple filling and push down and fill pie. Roll out second disc and place over the top trimming about 1/2" over hang then bring the two over hangs folded over each other to make the edge of the crust. Brush with some cream and sprinkle with sugar and cut some slits in top. Put in preheated 375 oven for 50 minutes or until bubbling through crust. Cool and enjoy.
