My strawberry coconut cheesecake turned out fantastic!

2 ea 8 oz cream cheese
8 oz cooked grits
1 oz rosehip strong tea
1 oz strawberry extract (a packet of strawberry koolaid)
6 ea medium eggs
1 pkt 3 oz instant coconut pudding
1 pkt vanilla pudding, cooking type
milk
strawberries
breadcrumbs

Preheat oven to 450.

Take the puddings and add to a blender container with 8 oz milk and beat until incorporated. Use hand mixer to beat cheese adding the eggs one at a time and the grits, tea, extract, and then blender container of puddings. Butter sides and bottom of cheesecake pan and sprinkle with breadcrumbs until all is coated well.

Using a spatula to break the force of the liquid, pour it into the pan onto the spatula until filled.

Put pan into oven and 10 minutes later turn down oven to 250 and bake 2 hours. Turn off oven and then remove pan when cool.

Turn out cheesecake and put sliced fresh strawberries on top around edge.

Yeah, grits are weird but the Italians sometimes use it in their cheesecakes. epicurious.com
