I've been OK with 16gb (and I could put 32 in if I wanted to pay for 4gb dimms, but 16's plenty for our boxes). I've been using Tyan's 3992 and sometimes Supermicro's similar board. If I had an instance that needed more than 32gb ram, I'd probably want more than 2 cores, anyway.
