You can very much see the shadow of Ancel Keys and fear of the researches to call spade a spade:

This state, called post-prandial dysmetabolism, induces immediate oxidant stress, which increases in direct proportion to the increases in glucose and triglycerides after a meal.

Ok, they recognize the problem, but they are afraid to say that it is carb-dense food that is causing the problem. Calling carbs bad is not "politically correct" and can result in researcher being sent to Sibiria (figuratively speaking).

Specifically, a diet high in minimally processed, high-fiber, plant-based foods such as vegetables and fruits, whole grains, legumes, and nuts will markedly blunt the post-meal increase in glucose, triglycerides, and inflammation.

The same thing here. The same can be achieved by any meal that does not have a high glycemic index and does not have high glycemic load. If one does not want to starve, avoiding high glycemic load means more clories from protein and fat.

Additionally, lean protein, vinegar, fish oil, tea, cinnamon, calorie restriction, weight loss, exercise, and low-dose to moderate-dose alcohol each positively impact post-prandial dysmetabolism.

Of course, lean protein, because saying any protein (allowing for saturated fat) is equivalent to touching the third rail, and the authors want to live and publish more...
