o you know of a "store bought" that you'd recommend

I'm sorry, I don't. That was the reason I embarked on the making it adventure. I'll make some in bulk and stuff them now but you really could give this a try the way I did for my experiment.

1 lb ground unseasoned pork
1 heaping t sugar
3/4 t pepper
1/2 t garlic
1/4 t ground fennel
1/8 t ground coriander
scant 1/4 cup ice water

Mix all the spices in the ice water. Sprinkle 1/2 teaspoon whole fennel over meat in a bowl. Add ice water and mix it all up well with your hands. Cover and let meld for 12 hours. Eat within 4 days or freeze.

You could just make patties then for a sandwich if you felt the urge to give this a go.
