It goes back to the idea that avoidance of saturated fats like butter is a good thing. I only use Olive and Canola oil now.

Canola Oil is a an oil from genetically modified rape seed. Rape seed has been fine for industrial use, but it is unfit for human consumption. Well, that was before genetic modification and high temperature refining that lowered (hopefully eliminated) Erucic Oil and increased Oleic Acid, and, voila, you go from a bug repellant to "health food".

re: saturated vs. unsaturated oils

Saturated oils are stable, including stable at high heat used in cooking. Unsaturated fats are not as stable. So under heat of cooking some of the weak double bonds may weaken and create your own, home grown trans fats.

This is just some info for you, BTW, I am not an absolutist. I have a bottle of canola oil at home, and used to use it. I used to use it for cooking, but I am switching to coconut oil and butter for cooking and olive oil for salads etc, and little bit of cooking...

Like I said before to Lane, it is only a question of time until the "state of the art" info goes full circle and we go back to lard. BTW, where can one buy lard these days?
