Here is the solution for jumping taught to me by an old Yellow Lab trainer:

When she jumps, catch her front paws in your hands and tell her "no jump' and don't let go until she cries. It hurts (minor really) dogs to have to bear their weight on their hind legs for longer than a minute or so. I did it with my dog when she was young, and it worked like a charm.

Can't advise you on the nipping, but I'd find a way to stop it. It could lead into something more serious. (google)

BTW wear thick leather gloves when you teach her not to jump. -g-
